Tonight's dinner was Taco Soup. It was perfect for the chilly, gloomy weather we have been having. There are many variations of this recipe, and here is mine:
1 lb ground beef
1 small onion, diced
1 can diced tomatoes
1 can rotel
1 can pinto beans
1 can diced green chiles
1 can black beans, drained
1 can corn, drained
1 package ranch dressing mix
1 package taco seasoning (I make my own from a recipe on allrecipes.com)
3 cups water
This recipe can be cooked on low 6-8 hours in a crock pot or simmered on the stove top for about 30 minutes to an hour. Adjust the directions depending on cooking method.
Brown ground beef with onion in a stock pot or skillet, drain. Add all remaining ingredients (do not drain anything that doesn't tell you to drain it). Cook in the crock pot or on the stove and serve when ready. Top with sour cream, cheese, and anything else that sounds good to you. This is great with cornbread as well.
